Pickled Squash

Ingredients

Cooking time: 2 hours (1 hour active)

Makes 5 pints 

Step 1

10-12 medium squash, sliced 

2 cups of onions, sliced 

1/2 cup plain salt

Step 2

4 red bell peppers, sliced 

2 1/2 cups vinegar

3 cups sugar

2 teaspoons celery seed

2 teaspoons mustard seed

Preparation

Step 1: Sprinkle salt over squash and onions. Let stand for 1 hour. (Rinse well).

Step 2: In a large pot, add all ingredients and bring to a boil, stirring constantly. Add squash and onions and bring to boil again. Pack squash in jars and cover with hot liquid. Place lids, which have been boiled, over jars and seal.
