Squash Fritters
Ingredients
Cooking time: 2 hours, 30 minutes (30 minutes active)
Servings: 6–8
2 pounds yellow squash, sliced
1 small onion, diced
2 eggs, beaten
1 cup Ritz cracker crumbs
Salt and pepper to taste
Vegetable oil for frying
Preparation
In a saute pan, cook squash and onion until tender. Drain and mash. Add eggs and crackers and season with salt and pepper. Make firm balls and chill for two hours. Fry until golden brown and drain on paper towels.
