CHERRY ICE CREAM
1 (12-ounce or larger) bottle maraschino cherries
2 1/2 cups sugar
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla
2 (12-ounce) cans evaporated milk
In a blender, chop cherries with their juice. In a large bowl, beat eggs well and add sugar. Continue mixing until well blended. Add condensed milk and vanilla, mixing well. Add salt, evaporated milk, and cherries. Pour into 6-quart ice cream freezer churn and add whole milk until mixture reaches fill line. Stir and freeze according to manufacturer’s instructions.
