Easy Potlikker Soup
1 tablespoon vegetable oil
1 pound smoked ham, chopped (about 3 cups)
1 large onion, diced
2 cloves garlic, minced
8 cups chicken broth
1 (16-ounce) bag frozen chopped collard greens (or other green of your choice)
1 (15.5-ounce) can black-eyed peas, drained and rinsed
1 (28-ounce) can petite diced tomatoes, drained
Salt and pepper

Servings: 6 to 8
Heat oil in a large pot or Dutch oven over medium heat. Add the ham and onion. Cook 5 to 7 minutes or until onions are translucent. Add the garlic and cook about a minute more. Add the chicken broth and bring to a boil. Stir in the greens. Bring back to a boil, reduce heat, cover and simmer 20 minutes.
Add the peas and tomatoes. Add salt and pepper to taste. Cook an additional 10 minutes.
