BANANA NUT BREAD
Ingredients
1 cup chopped pecans, divided
1 2/3 cups sugar
2/3 cup margarine or shortening
2 eggs
2 1/2 cups all-purpose flour
1 1/4 teaspoon baking powder
1 1/4 teaspoon baking soda
1 teaspoon salt
2/3 cup buttermilk
1 1/4 cups mashed bananas
1 teaspoon vanilla
Preparation
Grease a Bundt pan and sprinkle 1/2 cup pecans evenly in bottom of pan; set aside. Cream together the sugar and margarine in a large mixing bowl. Add eggs, blending well. Combine flour, baking powder, baking soda and salt. Add dry ingredients alternately with buttermilk, beginning and ending with dry ingredients. Stir in bananas, remaining 1/2 cup pecans and vanilla, blending well. Pour into prepared pan. Bake at 350 degrees for 25-30 minutes.
