HUNGARIAN PORK PAPRIKA

Ingredients

2 tablespoons flour
1 tablespoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound lean boneless pork, cut into 1-inch cubes
4 teaspoons olive oil
2 (14-ounce) cans stewed tomatoes
1/2 cup sour cream, at room temperature

Preparation

Combine flour, paprika, salt and pepper. Add meat, tossing to coat. In a skillet, brown meat in hot oil. Stir in tomatoes and cook, uncovered, over medium heat for 20 minutes, or until meat is tender. Remove from heat. Remove 1/2 cup of sauce and blend with sour cream. Return mixture to skillet, blending well, and heat through. Do NOT boil. Serve over hot cooked noodles. Makes 4 servings.
