Sweet and sour Conecuh sausage
Ingredients

Serves 6
1 tablespoon butter
1 green bell pepper, sliced
1 medium onion, sliced
1 tablespoon cornstarch
1/2 tablespoon ground ginger, optional
1 tablespoon vinegar
1 tablespoon soy sauce
1/2 cup apricot preserves
1 pound Conecuh Sausage, sliced
1 cup pineapple chunks
Hot cooked rice
Preparation
In a large skillet, saute onion and green pepper in butter for 5 minutes. Add cornstarch, ginger, vinegar, soy sauce and apricot preserves and stir for 2 minutes. Add sausage and cook over low heat until sauce thickens. Add pineapple chunks and stir until hot. Serve over rice.
