JAILHOUSE CHILI
Ingredients
1/4 cup cooking oil
3 pounds lean stew beef, diced
1 quart water
8 pods chili, chopped, or 6 tablespoons chili powder
1 tablespoon salt
5 cloves garlic, minced
1 teaspoon cumin
1 teaspoon marjoram
1 teaspoon red pepper
1 tablespoon sugar
3 tablespoons paprika
1 cup water
3 tablespoons all-purpose flour
6 tablespoons white cornmeal
Preparation
Heat oil in a dutch oven or large pot over high heat; add meat and stir constantly until meat is gray but not browned. Add 1 quart water; bring to a boil. Cover, reduce heat and simmer 1 1/2 –2 hours. Add chilies or chili powder, garlic, cumin, marjoram, red pepper, sugar and paprika; simmer, covered, for 30 minutes. In a small bowl combine 1 cup water with flour and cornmeal, blending until smooth. Stir flour mixture into chili and simmer, stirring, for 5 minutes, adding more water if chili gets too thick.
Makes 10-12 servings.
