MEXICAN WEDDING COOKIES
Ingredients
2 sticks butter, softened
4 tablespoons powdered sugar
2 cups cake flour
2 cups ground almonds
Pinch of salt
2 teaspoons vanilla
Additional powdered sugar
Preparation
In a bowl, cream together butter and powdered sugar until light and fluffy. Add remaining ingredients, mixing together well. Roll teaspoonfuls of dough into marble-sized balls. Place on ungreased cookie sheet. Bake at 300 degrees for 30 minutes, or lightly browned. Roll hot cookies in powdered sugar. Cool; roll in powdered sugar again. Makes 2-3 dozen.
