1 cup regular oatmeal, uncooked
1 cup buttermilk
1/2 cup firmly packed brown sugar
1/2 cup vegetable oil
1 egg, beaten
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Combine oats and buttermilk; let stand 1 hour. Add sugar, oil and egg to oats, mixing well. Combine flour, baking powder, baking soda and salt in a large mixing bowl. Make a well in the center of the dry mixture. Add oat mixture to dry ingredients, stirring just enough to moisten. Spoon into greased muffin pans, filling 2/3 full. Bake for 20-25 minutes at 400 degrees.
NOTE: For breakfast muffins, add 1/2 cup raisins to wet ingredients.
