TURKEY GUMBO

Ingredients

1 turkey carcass cooked, preferably smoked
1 large or 2 medium onions, chopped
4 celery ribs, chopped
3 bay leaves
1 clove garlic, minced
1 teaspoon dried sweet basil
2 tablespoons cooking oil
1 pound frozen gumbo vegetables
2 cups leftover turkey
2 cups cooked rice
2 (14.5-ounce) cans peeled tomatoes, roughly chopped
Juice of 1 lemon
1 teaspoon seasoned pepper

Preparation

Place turkey in a large soup pot or Dutch oven. Pour in 3 quarts of water, cover and bring to a boil. Lower heat and simmer for 1 1/2 to 2 hours. Remove carcass and chop turkey. In a separate pan, sauté onions, celery, bay leaves, garlic, and basil in cooking oil for 5-7 minutes or until vegetables are crisp-tender. Stir in frozen vegetables. Combine vegetables, turkey, rice, tomatoes, lemon juice and pepper in pot. Heat for 15 minutes. n
