VEGETABLE BEEF SOUP

Ingredients

1 pound ground beef
1 tablespoon oil (if beef is very lean)
1 small onion, diced
1 (10-ounce) bag frozen mixed vegetables
1 large can crushed or whole tomatoes
3 small potatoes, cubed
1 (4-ounce) can tomato sauce
2 teaspoons chili powder
1 teaspoon ground basil
1/2 teaspoon Italian seasoning

Preparation

Lightly brown ground beef in skillet. Drain any excess fat. Add onions and sauté until crisp-tender. Put all other ingredients into a Dutch oven or large stock pot. Add beef and onions. Cover and cook on medium heat until vegetables are done but not overcooked, approximately 35-40 minutes. Serves 8-10. Freezes well.
