ZUCCHINI MUFFINS

Ingredients

MUFFINS:
1 1/2 cups unpared zucchini, cut into quarters and thinly sliced
1/2 cup prepared biscuit mix
1/4 cup grated Parmesan cheese
1/2 teaspoon seasoning salt
1/4 teaspoon basil
1/4 teaspoon marjoram
1/4 teaspoon oregano
1/4 cup chopped onion
Dash white pepper
1 teaspoon crushed garlic
2 eggs, slightly beaten
1/4 cup salad oil
1 tablespoon chopped fresh parsley
FILLING:
3 ounces cream cheese, softened
1 tablespoon ranch dressing mix

Preparation

Preheat oven to 375 degrees. Combine all muffin ingredients except zucchini. Stir in zucchini and spoon into well-greased 1 3/4-inch muffin pans. Bake 15-20 minutes or until golden brown. Makes 24 muffins. To make filling, mix well cream cheese and ranch mix. Spread on Zucchini Muffins.
