1 quart sliced (1/4- to 1/2-inch-thick) okra (about 2 pounds fresh)
1 cup cornmeal
Butter-flavored nonstick cooking spray
Salt and pepper to taste
Place okra in a bowl; sprinkle with cornmeal, tossing to coat. Spread on a baking sheet that has been coated with butter-flavored nonstick spray. Spray okra lightly and season with salt and pepper. Bake at 375 degrees for 45-50 minutes, stirring occasionally, until golden brown. Makes 4-6 servings.
