BANANA PUDDING

Ingredients

2 1/2 cups sugar, divided
5 tablespoons flour
1 (12-ounce) can evaporated milk
1 cup milk
1 can water
6 eggs, separated
4 sliced bananas
1 box vanilla wafer cookies
1/2 teaspoon baking powder

Preparation

In a microwave-safe bowl, combine 2 cups sugar and flour. Add milks, water and beaten egg yolks and combine. Cook in microwave, stirring every two minutes until mixture is thickened.
Layer bananas and wafers in 9- X 13-inch baking dish and top with pudding mixture. Beat egg whites with baking powder and remaining 1/2 cup sugar until stiff. Spread over pudding and bake in 400-degree oven until top is lightly browned.
