1 cup unsalted butter, melted

1 cup sugar

1 cup firmly packed light brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon salt

2 teaspoons vanilla extract

2 eggs, well beaten

2 cups self-rising flour

1 large firm apple, peeled, cored and finely diced (I like Fuji, Granny Smith, Jazz or Honeycrisp)

1 cup chopped pecans


Heat oven to 325 F and lightly spray a 9-by-13-inch metal baking pan with nonstick cooking spray. In a large bowl, add melted butter, sugar, brown sugar, cinnamon, nutmeg, salt and vanilla and blend well. Add beaten eggs and stir well. Add flour and stir until all lumps are gone. Fold in apples and pecans. Spread batter evenly into the prepared dish.

Bake 40 to 50 minutes or until golden brown — be careful not to overcook. The dessert may still be jiggly in the center. Allow to cool, then slice and serve.
