BROCCOLI CORNBREAD MUFFINS
1 stick margarine, melted
1 (10-ounce) box frozen chopped broccoli, thawed and drained
4 eggs, beaten
1 onion, finely chopped
1 (8.5-ounce) box quick cornbread mix
2 cups grated mild cheddar cheese
Combine all ingredients in a bowl, blending together well. Spoon batter into muffin tins that have been sprayed with nonstick cooking spray, filling 3/4 full. Bake at 350 degrees for 30-45 minutes. Makes 12 muffins.
