ARTICHOKE NIBBLES

Ingredients

2 (6-ounce) jars marinated artichokes
1 onion, finely chopped
1 clove garlic, minced
2 tablespoons butter
4 eggs
1/4 cup finely crumbled buttery-flavored crackers
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon oregano
1/8 teaspoon hot sauce
2 cups shredded sharp Cheddar cheese
1 tablespoon dried parsley

Preparation

Drain artichokes; chop and set aside. In a small skillet, saute onion and garlic in butter until tender; cool. Beat eggs with a fork; stir in cracker crumbs, salt, pepper, oregano, hot sauce, cheese and parsley. Stir in artichokes, blending well. Add sauteed onion and garlic, stirring to blend. Spread mixture into a greased 8- x 10-inch pan. Bake at 350 degrees for 30 minutes. Cool slightly; cut into 1-inch squares. Makes 80 squares. Dot Sanford, Autauga County
