Ingredients

1 (4-pound) boneless pork roast
Salt and pepper to taste
3 tablespoons water
1 teaspoon dry mustard
3/4 cup peach preserves
1 tablespoon soy sauce
2 tablespoons lemon juice
Peach halves

Preparation

Sprinkle roast with salt and pepper. Place in shallow pan and roast at 325 degrees for 1 hour and 15 minutes. Meanwhile, in a small saucepan, stir together the water, mustard, preserves, soy sauce and lemon juice. Simmer over low heat 5 minutes. Remove roast from oven and baste with peach sauce. Return to oven and roast 30 minutes, or until roast reaches an internal temperature of 155 degrees, basting occasionally. Place peach halves around roast during the last 15 minutes of cooking time. Let roast rest 5-10 minutes before slicing. Makes 8-10 servings.
