ENGLISH ROCKS
Ingredients
1 cup margarine
1 1/2 cups firmly packed light brown sugar
3 eggs
2 cups all-purpose flour
1 teaspoon soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1/2 cup buttermilk
6 cups chopped pecans or mixed nuts (pecans, walnuts, almonds)
1 cup chopped candied cherries
6 slices candied pineapple, chopped
1 (8-ounce) box chopped dates
Preparation
Cream margarine and sugar until light and fluffy. Beat in eggs. In a separate bowl, combine flour, soda, salt and spices. Blend into creamed mixture. Beat in buttermilk. Fold in nuts and fruits. Refrigerate dough 8 hours or overnight. Drop dough by teaspoonfuls onto greased baking sheets. Bake at 325 degrees for 20-25 minutes. Makes 5-6 dozen.
