GRANDMOTHER’S WHITE CARAMEL FILLING
1 stick butter
3 1/2 cups sugar
1 cup milk
2 tablespoons light corn syrup
1/2 teaspoon vanilla
Combine butter, sugar, milk and corn syrup in a heavy saucepan. Bring to a boil, stirring constantly. Boil, stirring, until thickened, or to soft-ball stage; cool. Add vanilla; beat until of spreading consistency. Use to fill a three-layer cake, spreading between layers and on top. Add small amount of scalded milk if mixture thickens too quickly while spreading.
