MARDI GRAS PARTY CAKE

Ingredients

2/3 cup butterscotch morsels
1/4 cup water
2 1/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/4 cups sugar
1/2 cup solid vegetable shortening
3 eggs
1 cup buttermilk
Butterscotch Filling (recipe follows)
Sea Foam Frosting (recipe follows)

Preparation

Combine butterscotch morsels and water in a saucepan. Heat over low heat until melted; set aside to cool. In one mixing bowl, sift together the flour, salt, soda and baking powder; set aside. In a large mixing bowl, cream together the sugar and shortening until light and fluffy. Add eggs one at a time, beating well after each addition. Blend in melted butterscotch. Add flour mixture alternately with buttermilk to creamed mixture, beginning and ending with flour. Divide batter between two greased and floured 9-inch layer pans or 8-inch square pans. Bake at 375 degrees for 25-30 minutes, until cake tests done. Remove from pans and cool. Spread Butterscotch Filling between layers and on top to within 1/2 inch of edge. Frost sides and top edges with Sea Foam Frosting.
