NEW YORK-STYLE CHEESECAKE

Ingredients

Crust:
14 slices zwieback toast, finely crushed
1/2 cup sugar
1 stick margarine, softened
Filling:
6 (8-ounce) packages (3 pounds) cream cheese, softened
6 eggs
1/2 cup plus 2 tablespoons all-purpose flour
2 1/2 cups sugar
1 1/2 cups whipping cream
1 teaspoon vanilla
Juice of 1 lemon
Cherry, lemon and/or blueberry pie filling

Preparation

Combine ingredients, blending well. Press into bottom of a greased 10-inch springform pan; set aside. In a large mixing bowl, cream the cream cheese until smooth; add remaining ingredients, mixing well. Pour over crust. Place cake pan in a larger pan filled to a 1-inch depth with water, making certain the cake pan is centered in larger pan and is not touching sides. Bake at 350 degrees for 1 hour. Turn oven off; leave cake in oven for 30 minutes with door closed. Remove cake (may appear soft, runny and browned on top; will set in cooling process) and let stand until cooled, about 8 hours. Refrigerate overnight to chill thoroughly. Serve with choice of pie fillings as topping.
