QUICK ROLLS

Ingredients

1 package dry yeast
1/4 cup lukewarm water
1/2 cup sugar
1/4 cup oil
1 cup buttermilk
4 cups self-rising flour
1 stick margarine

Preparation

Dissolve yeast in warm water in a large bowl. In a small bowl, combine sugar, oil and buttermilk; stir into dissolved yeast mixture. Add flour 1 cup at a time, adding enough to form soft dough that pulls away from sides of bowl. Turn dough out on a lightly floured surface and knead for 2 minutes, until smooth and elastic. Roll out to 1/2-inch thickness. Cut with 2-inch biscuit cutter. Place 1 pat margarine in center of each circle; fold over. Place rolls on well-greased baking sheet. Cover and let rise until doubled in size, about 1 hour. Bake at 400 degrees for 8-10 minutes, until lightly browned. Makes 24 rolls.
