Ingredients
1/3 cup sugar
1/3 cup firmly packed brown sugar
1/3 cup water
1 tablespoon corn syrup
1 egg white
1/4 teaspoon cream of tartar
Preparation
Combine sugars, water and corn syrup in a saucepan. Cook over medium heat, stirring, until mixture is clear. Cook without stirring until a small amount of syrup dropped in cold water forms a soft ball (240 degrees). Meanwhile, with electric mixer, beat egg white with cream of tartar until stiff peaks form. Continuing to beat, gradually add hot syrup in a slow, steady stream. Beat constantly until mixture reaches spreading consistency.
