SWEET POTATO-APPLE CASSEROLE

Ingredients

3-4 medium sweet potatoes, peeled and sliced 1/4-inch thick
2 cups sliced peeled apples
3 cups miniature marshmallows
1 cup sugar
1 teaspoon cinnamon
1 teaspoon salt
1/2 cup chopped pecans
2 tablespoons cornstarch
1/2 cup apple cider
1 tablespoon butter

Preparation

Layer sweet potatoes, apples and marshmallows in a greased 9- x 13-inch baking dish. Sprinkle with mixture of sugar, cinnamon, salt and pecans. Combine cornstarch and cider in a small bowl, blending well; pour over casserole. Dot with butter. Cover and bake at 350 degrees for 1 hour. Makes 8-10 servings.
