PINEAPPLE CAKE

Ingredients

2 cups sugar
2 cups flour
2 teaspoons baking soda
2 eggs, beaten
1 (20-ounce) can crushed pineapple in its own juice, undrained
1 teaspoon vanilla
1 cup chopped pecans, divided
Frosting (Recipe follows)

Preparation

Combine sugar, flour, baking soda, eggs, pineapple, vanilla and 1/2 cup of the chopped pecans in a large bowl; beat at medium speed of electric mixer for 1 minute. Pour into a greased and floured 9- by 13-inch pan and bake at 350 degrees for 40-45 minutes. Cool and frost. Sprinkle remaining 1/2 cup chopped pecans over top of cake. (Note: This cake contains no oil or margarine.) Frosting: 1 (8-ounce) package cream cheese, softened 1 stick margarine, softened 1 1/2 cups powdered sugar 1 teaspoon vanilla Cream together the cream cheese and margarine. Blend in powdered sugar and vanilla.
