Ingredients

1/2 wild turkey breast, sliced into small cutlets
1/4 cup Worcestershire sauce
2-3 tablespoons vinegar or lemon juice
Spices (black pepper, garlic, salt, cajun seasoning or ranch dressing mix)
Vegetable oil
Buttermilk
Self-rising flour

Preparation

Place cutlets in a zipper bag or glass bowl. Pour in vinegar and Worcestershire sauce. Add favorite spices in proportion to how much you like them. Allow to marinate for 1 hour or until marinade is soaked up. Preheat several inches of cooking oil in a large skillet or fryer to medium-high. Dip cutlets in buttermilk and dredge in flour. Drop into hot oil and cook until browned. Remove and allow to drain. Serve plain or with sweet and sour sauce. Lillian Slay, Chambers County
