Wild Hog Pot Roast

Ingredients

1 hog shoulder or small ham
Creole seasoning
6 medium Irish potatoes
5 medium carrots
4 medium onions
2 bell peppers (optional)
Salt and black pepper to taste

Preparation

Sprinkle meat liberally with creole seasoning on both sides. Place on aluminum foil. Peel and halve potatoes; scrape and wash carrots; peel and halve onions; halve and remove seeds from bell peppers. Place vegetables on or around meat. Salt and pepper vegetables to taste. Wrap two layers of foil over meat and vegetables. Cook at 300 degrees for 6 hours or until done. Makes 6 servings. Hunter W.
