CREAMED POTATO CASSEROLE

Ingredients

5 pounds potatoes
2 (3-ounce) packages cream cheese, softened
1 (8-ounce) carton sour cream
1 teaspoon onion salt
1 teaspoon salt
2 sticks butter, cut in chunks and softened
1 cup grated Cheddar cheese

Preparation

Peel and cube potatoes. Place in a large pot and boil in water to cover for 20 minutes, until potatoes are tender. Drain; cream well with electric mixer. To hot potatoes, add cream cheese, sour cream, onion salt, salt and butter. Blend until cream cheese and butter are melted and ingredients are mixed well. Pour into a greased 9- x 13-inch casserole. Sprinkle grated cheese over casserole. Bake at 350 degrees for 30 minutes. Will keep in refrigerator for several days. Makes 12 servings.
