PINEAPPLE AND CHEESE CASSEROLE
1 cup self-rising flour
1 cup sugar
1 (20-ounce) can crushed or chunk pineapple
1 1/2 cups crushed round buttery-flavored crackers
1 cup grated cheese
Combine flour and sugar. Spoon into a greased 9-inch casserole. Drain pineapple, reserving juice. Sprinkle juice over flour/sugar mixture. Spread pineapple evenly over all; sprinkle with crushed crackers. Top with cheese. Bake at 350 for 20 minutes, until heated and bubbly. Makes 6-8 servings.
