CHOCOLATE ECLAIR DESSERT
Ingredients
1/2 cup sugar
3 tablespoons skim milk
1 teaspoon vanilla
4 tablespoons cocoa
1/4 cup margarine
2 small packages fat-free, sugar-free instant vanilla pudding mix
3 cups skim milk
1 teaspoon vanilla
1 (8-ounce) container fat-free non-dairy whipped topping
Low-fat graham crackers
Preparation
In a saucepan, combine first five ingredients. Bring to a boil over medium-high heat, stirring, and boil for 1 minute. Set aside to cool. In a bowl, combine pudding, 3 cups skim milk and 1 teaspoon vanilla. Fold in whipped topping. Arrange whole graham crackers over bottom of a 9-x 13-inch dish to cover. Spread half of the pudding over the crackers. Repeat layers. Top with another layer of graham crackers and pour chocolate mixture over all. Refrigerate 2-3 hours before serving.
