DAY-OF-THE-WEDDING SAUSAGE CASSEROLE

Ingredients

1 (16-ounce) package hot pork sausage
1 (16-ounce) package mild pork sausage
1 small onion, finely chopped
2 cups cooked rice
6 cups crispy rice cereal
16 ounces (4 cups) shredded sharp
Cheddar cheese
4 eggs, beaten
2 cans cream of celery soup
1/4 cup milk

Preparation

In a large skillet, brown sausage and onion over medium heat. Drain; stir in rice. Spread sausage mixture in a greased 3-quart casserole. Top with cereal. Sprinkle 2 cups of the cheese over the cereal. In a bowl, combine eggs, soup and milk. Pour evenly over casserole. Top with remaining cheese. Bake at 350 degrees for 35 minutes. Makes 10-12 servings.
