GRILLED CATFISH FILLETS

Ingredients

4 sticks butter or margarine
1/2 cup soy sauce
1/2 cup Worcestershire sauce
1 cup vinegar
4 tablespoons lemon juice
Dash of hot sauce
Dash of salt
2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons white pepper
2 teaspoons garlic powder
Catfish fillets
Lemon pepper
Tony Chachere’s Original Creole Seasoning

Preparation

Melt butter in saucepan; add soy sauce, Worcestershire sauce, vinegar, lemon juice, hot sauce, salt, peppers and garlic powder, blending well. Season fillets on both sides with lemon pepper and Creole seasoning mix. Grill 5-7 minutes on each side, or until fish flakes easily, basting frequently with sauce. Refrigerate unused sauce, in empty squeeze ketchup bottles if desired, for later use. Makes 5-6 cups. –Willard and Dea Powe, Dallas County
