CATFISH AMANDINE

Ingredients

2 tablespoons margarine
6 U.S. farm-raised catfish fillets
1/4 cup slivered almonds
1 teaspoon grated lemon zest
2 teaspoons lemon juice
Parsley and lemon

Preparation

Melt 1 tablespoon of margarine in large skillet over medium heat. Add catfish fillets and cook for 3-4 minutes on each side, or until fish flakes easily when tested with fork. Transfer to serving platter and keep warm. In same skillet, melt remaining 1 tablespoon margarine. Add almonds, lemon zest and lemon juice. Saute for 1 minute. Pour sauce over fillets and garnish with parsley and lemon. Serves 6.
