CATFISH COCKTAIL
Ingredients
1 pound catfish fillets
2 cups chicken broth
1 (8-ounce) bottle lime juice, chilled
Cocktail sauce
Preparation
Cut catfish into 1-inch cubes. Poach in chicken broth for 5 minutes. Drain. Pour cold lime juice over fish in a glass bowl, and refrigerate at least 30 minutes. Drain catfish. Serve with cocktail sauce. –Beverly Kyser, Hale County
