CATFISH WITH BACON AND HORSERADISH SAUCE
CATFISH WITH BACON AND HORSERADISH SAUCE
Ingredients
6 farm-raised catfish fillets
4 strips of bacon
1 (8-ounce) package cream cheese, softened
1/4 cup onion, chopped
2 tablespoons butter
1/4 cup dry white wine
2 tablespoons horseradish
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons parsley, minced
Preparation
Fry bacon until crisp, drain and set aside. Place fish in a buttered baking dish. Saute onion in butter until soft. In a bowl, blend together cream cheese, white wine, horseradish, mustard, salt, pepper and onions. Pour over fish and top with crumbled bacon. Bake in a 350 degree oven for 30 minutes or until fish flakes easily with a fork. Garnish with parsley.
