CREAMY CATFISH DIP

Ingredients

1 1/2 pound cooked catfish, flaked
1 cup small curd cottage cheese
1 cup sour cream
1/2 cup shredded carrot
1/4 cup chopped sweet pickles, drained
2 tablespoons chopped pimento
1 teaspoon horseradish
1/4 teaspoon salt
4 teaspoons grated onion
Chopped parsley
Assorted crisp vegetables, crackers or chips

Preparation

Combine cottage cheese, sour cream, carrots, pickles, pimento horseradish, grated onion and salt; mix well. Stir in flaked fish. Chill several hours. Sprinkle with parsley and serve with vegetables, crackers or chips. Makes about 3 cups. –Ralph Martin, Wilcox County
