Ingredients

4 farm-raised catfish fillets
1 cup salsa
3/4 cup grated Monterey Jack cheese
1/2 cup chopped black olives
1/2 cup sour cream
Salt, pepper and garlic powder

Preparation

Spray glass baking dish with nonstick cooking spray. Sprinkle salt, pepper and garlic powder to taste on both sides of fillets. Place fish in baking dish and bake at 350 degrees until fish flakes (about 30 minutes). Sprinkle grated cheese on baked fish. Pour salsa on fillets and cook until cheese melts. Sprinkle each fillet with olives and dollop with a teaspoon of sour cream. –Judy Spree, Greene County
