Outdoor Boiled Crawfish

Ingredients

40 pounds live crawfish
2 (4-ounce) bottles Zatarain’s liquid crab boil
2 (1-pound) boxes of salt
1 small bottle Tabasco sauce
2 ounces garlic powder
1 stick (1/2 cup) butter

Preparation

Mix all ingredients except crawfish. Bring 20 quarts of water to a boil in a 60-quart pot. Add live crawfish. Return to a rolling boil; continue boiling for 12 minutes. Add flavoring mixture and boil 3 minutes more. Turn off heat. Add 5-10 more quarts of water or ten pounds of ice. Let sit 10 minutes before serving. Note: Potatoes can be added before bringing water to its first boil, or corn on the cob or sausage can be added with flavorings. -Benny Rhodes, Houma, La.
