CORNBREAD SALAD

Ingredients

1 (8.5-ounce) box corn muffin mix
9 slices bacon, cooked and crumbled
1/2 cup drained sweet pickle relish
1/4 cup sweet pickle relish juice
1 green bell pepper, chopped
2 large tomatoes, chopped
Chopped onion to taste
1 cup mayonnaise, or to taste

Preparation

Make cornbread according to package directions; let cool. Crumble cornbread into a serving bowl; add remaining ingredients, stirring until thoroughly mixed. (May be prepared ahead and refrigerated to serve the following day.) Makes 6-8 servings. –Nella Dean Earnest, Walker County
