ASPARAGUS CASSEROLE

Ingredients

1 (15-ounce) can asparagus cuts
4 tablespoons butter, divided
1 cup milk
2 tablespoons plain flour
1/4 teaspoon salt
4 slices American cheese
1 cup round buttery-flavored cracker crumbs

Preparation

Bring undrained asparagus and 2 tablespoons of the butter to a boil in a saucepan to melt butter. Drain and pour into a lightly greased 2-quart casserole dish. In another saucepan, combine milk, flour and salt, blending until smooth. Cook over medium heat, stirring constantly, until thickened. Pour over asparagus. Cover top with cheese slices. Sprinkle with cracker crumbs and dot with remaining 2 tablespoons butter. Bake at 350 degrees for 20 minutes, until crumbs are browned. Makes 8-10 servings. –Susan Newby Ming
