Blueberry Banana Cream Pie

Ingredients

3/4 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 egg yolks
3 cups milk
1 teaspoon vanilla extract
1 tablespoon butter
1 1/2 cups blueberries
1 (9-inch) pie shell, baked
1 banana
1 cup whipping cream
1/4 cup powdered sugar

Preparation

In a large saucepan, stir together sugar, cornstarch and salt. Mix together egg yolks and milk and add to the sugar mixture. Cook over medium heat, stirring constantly until thickened (approximately 15 minutes). When thickened, remove from heat and add vanilla and butter. Stir to melt butter; fold in blueberries. Cool. Spread half of filling on bottom of pie shell. Slice the banana over the filling. Cover with the remainder of the filling. In a large bowl, beat the whipping cream gradually adding the powdered sugar until stiff peaks form. Spread over filling. Chill. –Pat Randle, Lee County
