Cherry Surprise


1 cup sugar
3 tablespoons cornstarch
1/2 teaspoon salt
1 (16-ounce) can pitted tart cherries, drained, reserving 1/2 cup juice
1/4 cup crushed pineapple, drained
1/4 teaspoon red food coloring
1 tablespoon butter or margarine
1/4 teaspoon almond flavoring
Pastry for a 2-crust pie, unbaked


In medium saucepan, stir together sugar, cornstarch and salt. Stir in cherries, pineapple, reserved juice and food coloring. Bring to a boil over medium heat, stirring constantly. Reduce heat and boil 1 minute. Remove from heat and add butter and almond flavoring. Set aside and cool. Preheat oven at 425 degrees. Pour cooled filling in unbaked pie shell, fit top crust over pie and seal. Cut vent in top crust. Bake 10 minutes; reduce heat to 350 degrees and bake 30 minutes until brown.
