Ingredients

2 tablespoons canola oil
3-4 cups self-rising cornmeal
1 large egg
1 1/2-2 cups buttermilk

Preparation

Heat oven to 375 degrees. Place oil in a 9- x 13-inch pan and put in oven. Meanwhile, in a bowl, combine cornmeal, egg and enough buttermilk to bring batter to medium consistency. Add more buttermilk if batter is too thick. Remove pan from oven; pour part of the hot oil into batter, stirring to blend. Pour batter into pan. Bake at 375 degrees for 30 minutes, or until browned well. Let sit overnight. Use the next day for dressing. –Martha (Mrs. James) Newby
