Honey-Crunch Pecan Pie

Ingredients

4 large eggs, lightly beaten
1 cup light corn syrup
1/4 cup sugar
1/4 cup light brown sugar, firmly packed
2 tablespoons butter or margarine, melted
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup chopped pecans
1 (10-inch) pastry shell, unbaked
1/4 cup plus 3 tablespoons light brown sugar
1/4 cup butter or margarine
1/3 cup honey
2 cups pecan halves

Preparation

Combine first 7 ingredients in a large bowl; stir well with a wire whisk until blended. Stir in chopped pecans. Spoon pecan mixture into pastry shell. Bake at 350 degrees for 35 minutes. (Cover with aluminum foil after 25 minutes to prevent excessive browning, if necessary.) Combine 1/4 cup plus 3 tablespoons light brown sugar, 1/4 cup butter and honey in a medium saucepan; cook mixture over medium heat 2 minutes or until sugar dissolves and butter melts, stirring mixture often. Add pecan halves, and stir gently until pecan halves are coated. Spoon pecan mixture evenly over pie and bake for 10 additional minutes or until topping is bubbly. Let cool completely on wire rack.
