Marinated Smoked Pork Tenderloin

Ingredients

1 (4-5 pound) boneless pork tenderloin
1/2 cup Dale’s Steak Seasoning
2 tablespoons Worcestershire sauce
1/2 teaspoon Lawry’s seasoned salt
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Lawry’s seasoned salt
1 clove of garlic, sliced

Preparation

Combine Dale’s seasoning, Worcestershire sauce and 1/2 teaspoon Lawry’s seasoned salt. Mix well to make a marinade. Place meat on a pan or large plate and inject marinade into meat using a marinade injector. Sprinkle salt, pepper and 1 teaspoon Lawry’s seasoned salt on both sides of meat and refrigerate overnight. Before cooking, insert garlic pieces into cut pockets throughout meat. Place on hot smoker at 275-300 degrees for 3 hours or until tender. Turn occasionally. Let meat stand for 15-20 minutes before slicing. Makes 8-10 servings. –John Fincher, Mobile County
