Peanut Butter Pie

Ingredients

1/2 cup sugar
1/8 teaspoon salt
1/3 cup flour
3 egg yolks
2 cups milk
2 tablespoons butter
1 teaspoon vanilla extract
1/3 cup peanut butter
3/4 cup powdered sugar
1 (9-inch) pie crust, unbaked
Meringue (recipe follows)

Preparation

Mix sugar, salt, flour, egg yolks, milk and butter in a double boiler or heavy saucepan. Cook until thick, stirring often. Add vanilla. Mix peanut butter and powdered sugar in a bowl. Mix until consistency is like little pebbles. Spread half of this mixture evenly over an unbaked pie crust. Bake for 12 minutes at 400 degrees. Pour cooked custard into baked pie crust. Spread other half of peanut butter mixture over custard. Cover pie with meringue and bake at 375 degrees for 12 minutes.
