SQUASH CASSEROLE
Ingredients
6 large yellow squash, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg, beaten
2 tablespoons mayonnaise
1 cup shredded mild Cheddar cheese
1 cup round buttery-flavored cracker crumbs
1/2 stick butter, melted
Preparation
Cook squash in a small amount of boiling water 5-7 minutes, until tender. Drain and mash. Add salt, pepper, egg and mayonnaise, blending with a fork. Place in a lightly greased 1 1/2-quart baking dish. Sprinkle cheese over all. Toss cracker crumbs with butter and sprinkle over all. Bake at 350 degrees for 30 minutes.
