ANNETTE’S NO-BAKE CHEESECAKE
Ingredients
1 1/3 packages (from a 16-ounce box) graham crackers, finely crushed
1 stick butter or margarine, melted
1 tablespoon packed brown sugar
3/4 cup granulated sugar
1 (8-ounce) package cream cheese, softened
1 small box lemon gelatin
1/2 cup hot water
1 (12-ounce) can evaporated milk, chilled
Preparation
Combine graham cracker crumbs with melted butter and brown sugar in a bowl, blending well. Press in bottom and up sides of a 9-inch pie plate; set aside. In a mixing bowl, cream together the sugar and cream cheese. In a small bowl, combine gelatin with hot water and stir to dissolve; add to cream cheese mixture. In a separate mixing bowl, beat chilled milk at high speed of electric mixer until peaks form. Fold into creamed mixture. Spoon mixture into crust. Chill at least 2 hours before serving.
